A three protein 80:10:10 mince made with all locally sourced British produce, including 30% whole oily fish either mackerel, sardines, sprats or salmon, 20% lamb trim, 15% lamb heart, 15% lamb lung, 10% turkey meat with bone, and 10% offal, of which is 5% lamb liver and 5% either lamb spleen or lamb kidney.

Minced on a 13mm plate for a chunky, meaty texture.
